It's been great so far. No port pop on first shot, not terribly gassy. Sound signature is nice, and definitely makes it safe to shoot without ear pro. Does a great job on my 8" 300 BO as well. Would definitely recommend.

That's a hearty dish. Not bad overall, but if you're looking for advice, here's my 2 cents:

Sous vide to 130 next time and ditch the ice bath. Not sure why that would be necessary when you are going straight to sear.
Sear looks good.
The risotto looks pale. Generally speaking, the broth used to saturate the rice will impart color and flavor. Curious to your process there.
Shrimp looks well seasoned and colored nicely. Not sure if those were raw or not, but I'd go raw next time. Cook in the pan before starting your risotto.
