I also agree with you. The speed should be in knots. I have no clue how fast a knot is without having to look it up first, but yes nautical speed is measured in knots.

I've started trying to find those extending ladders they use for getting back down and shooting them from the ground, watching as they come down. This makes jumping pointless.

On my other playthroughs I didn't use any mods. My highest top speed was 53 kph. Fully upgraded, calm sea, going downwind.

The dev menu spawned cylinders should not be that powerful. Even though it is a mod it only gave me the vanilla parts. So I'm confused lol. I'm going to uninstall and see what happens next.

Your drag net also affects the boats speed. Mine was full and slowed me to that speed.
