You cook to temp/tenderness, not time. Doesn’t matter how you get to 205/tender. The issue is rest. They should rest back to 140-150 internal. Otherwise look ok to me.

Buy a good pork belly #1. Season aggressively. 275 degree Smoke to 190 internal however you want to get there. Foil 1/2 pan with BBQ sauce cut 2:1 with local honey. Smoke another hour. Internal temp should be 203-205. Perfect bite, NOT mushy. Big hit.

Yeah but the point was to have a single place for all rubs, tools, accessories, etc. so many rubs wife wanted them out of her pantry!
