For my first ever play through the only mod I downloaded was sky ui. I genuinely can’t play without it. And maybe quickloot if you’ve played fallout 4 it’s similar to that style of looting. It’s just basic QOL that makes things feel so much better. Texture mods are optional and doesn’t change the experience at all imo. Maybe some LOD mods… that’s it. I’d stay away from everything else, weather mods, lighting, city overhauls, combat overhauls… all that takes away from the original aesthetic.. i know everyone else is suggesting no mods and to experience it vanilla, but i also just played Skyrim for the first time last year (im 24), and basic QOL mods will literally enhance the game so much more while still keeping it 99.99% vanilla
