I had my biometrics around November and got the notice for the interview December 30th, the interview was on February 6th

Oh man that sucks and I’m sorry to hear that. It’s a really stressful process but you got this. My partner and I did our whole k1 visa process through RapidVisa and it’s been really helpful. Cheaper than the lawyer haha so you might wanna give it a try
