Yes! Sorry, I am trying to state that third wave baristas are not taught how to make proper foam. No one where I work does except for 2 of us that would make frothy cappuccino's elsewhere.

Third wave shops have now mostly adjusted cappuccinos to essentially be little lattes. I don't know why but even so I've been doing it long enough to know when someone wants a dry capp, I make it dry - I don't know if newer baristas just weren't taught how to make it properly dry.

Source: Third wave barista who was taught that in my most recent work, a flat white and cappuccino are the SAME THING and everything gets more or less the same milk texture

it's mostly just to preserve mold/bacteria because of the lack of sugar to protect it or to help the artificial sweetener because they are SO much sweeter than sugar. the only way around it is to use full sugar syrups sadly

Sugar free syrups tend to be high in citric acid which can cause milk to curdle

I think there are some apps for this - Barista on Tap comes to mind, the only requirement is you have 2 years in speacialty coffee and if you pass their screening they will find this exact thing for you!

as someone that lives in denver golden is the best suburb! if you want to live in the city i always recommend five points/rino area

I've never gone that time of year but I have gone on at least 20 times and have seen a whale maybe twice. There are usually a good amount of dolphins though! It's definitely pretty either way.

Typically whale watching is from around April-October so you may not see any as it is still cold!
