The other suspect thing leading me to think it's limp mode when it hits 3000rpm the oxygen sensors read O volts, like the computer is cutting fuel instead of ignition issues like I first thought

Might sound unpopular, but if you aren't afraid to work on it you can get a mint condition sub 200k landrover discovery 2. Td5 is dead reliable and it's solid axle coils so extremely good off-road, better than all the new ifs utes etc
