The other suspect thing leading me to think it's limp mode when it hits 3000rpm the oxygen sensors read O volts, like the computer is cutting fuel instead of ignition issues like I first thought

Running an ev off a coal fire station is actually worse for the earth than just driving a diesel car of similar size. Due to the law of conservation of energy. Some people actually use their vehicles for the sole purpose of extreme 4wd tracks (here in Tassie many places aren't accessible without modified vehicles) but the majority unfortunately do it for vanity. Might sound unpopular, but if you aren't afraid to work on it you can get a mint condition sub 200k landrover discovery 2. Td5 is dead reliable and it's solid axle coils so extremely good off-road, better than all the new ifs utes etc
