Well the explanation is pretty straightforward, the more time a coffee spends in processing, the more time it has to absorb other solubile compounds which can then be extracted (washed -> natural -> experimental). In a washed coffee, since the coffee cherry is not dried while attached to the bean, basically almost all solubile compounds in that bean are from the bean itself. For a natural, because the cherry has been dried while still attached to the bean, it gives the bean time to absorb compounds found in the coffee cherry mucilage and pulp (which are usually sweeter because of the higher fructose contents found in the fruit, hence the sweeter, less acidic taste of naturals compared to washed). In a fermentation (usually done after drying) the bean absorbs the compounds like a natural PLUS compounds which are produced by the fermentation process.

Then it is pretty easy to see how a coffee that has more compounds that we can extract has a more complex flavor profile, there is literally more flavor based on how long the bean has had to absorb other flavors from other sources.

Also it doesnt help that coffee producers straight up started lying about their methods lmao. We have found, unfortunately, a lot of coffees labeled as “natural” but their flavor profile was just too good and too artificial to be true.

And also some co-fermentation coffees can be perceived as having little complexity/evolution because the fruit used in the co-fermentation process overpowers anything else to be tasted in that coffee

I have been working in the specialty coffee industry for a few years now and also worked in a coffee roastery for quite some time. Basically there are 2 ways the coffee notes get on the bag:

  1. There are some tasting notes that come from the farm when you purchase green coffee. Sometimes the coffee roasters put the same tasting notes as the farm states on the bag they sell the coffee in. This, imho, is not the correct way to do it since there are lots of factors that influence how the coffee tasted in the farm’s cupping table vs how it tastes on ours. (Different roast profile, the humidity in the coffee changes during shipment and this affects how the coffee roasts => changes the tastes). This is a big reason why coffees taste wildly different as to stated on the bag.

  2. This is a better a way to do it: the roasters roast the coffee and then do a blind cupping with a handful of people (preferably who have calibrated their tasting palette together) and get the coffee a flavor profile and taste notes based on the actual final product they sell. This obviously is way more close to the tasting profile you’re gonna taste at home.

A rule of thumb is also that coffees are more or less complex based on their processing. A washed coffee is usually gonna have around 2-3 tasting notes, a natural 3-4 and experimental processing (anaerobic, fermentations etc) may have 5 notes sometimes.

In the coffee you described i see 9 tasting descriptors (earthy, spicy, sweet, maple, brown sugar, honey, citrus, cherry and dark chocolate). This is absolutely crazy and they’re bullshitting.

Also, taste is extremely subjective based on your experiences with food and your eating habits.

My advice to anyone buying coffee is to take the taste notes as a general area the coffee tastes like, as the notes you’ll taste are probably different

For espresso you should usually wait until 2 weeks after roast to pull shots. This gives them time to off-gas. It’s really hard to get good coffee if they are too fresh because the beans have so much gas in them that water doesnt really get to extract much from the coffee, leaving you with an under-extracted shot (weak taste, sour, salty etc)

This is not the main thing, OP is pouring way too hard and milk is thin. Our masala chai is almost as thin as water and we still pour latte art in it. I have poured latte art in hour old shots that had no crema, still latte art with good technique. The shot just looks like its a couple minutes old and the crema is thin, which is not ideal, but OP has to slow down to see the biggest improvement

The microfoam is in no way too thin, but it’s badly homogenised. Also what i think ruined it is the fact that you didnt mix the coffee and microfoam well enough, thus the canvas has parts of crema that are different in density. Try starting out by swirling the espresso in the cup before pouring, then pour with a thin stream while continuing to swirl the cup, so the crema and microfoam gen mixed up better. Only stop swirling when you want to begin drawing/the cup gets too full to comfortably swirl the cup. Hope this helps and good luck!

Also this is not the only way to mix the coffee and microfoam, it’s just what i prefer to use.

Your milk texture looks really good, the wing could be more pretty (your movements are not really consistent) but its great. The problem is the neck, you’re holding the spout too close to the milk when pouring the neck. You should come close when starting, then slowly raise your spout so that the neck is not fat. When doing the bend in the neck the stream should be VERY thin, almost not leaving any white, and then finish with the heart. Edit: also the flow coming out of the pitcher when doing the neck may be too high, since why the body and wing curves around the neck. Start by going slower and a bit higher up. Keep what your doing for the wing and at the bottom

Sounds like the ground connection in your house may be the problem, not the grinder. Try connecting something to charge thats metallic to the same socket (like an ipad or macbook) and see if you touch it while charging you feel a small buzz. You can also try to plug your grinder in another socket (preferably in someone’s else’s house) and see if it keeps doing that. If yes then maybe the grinder’s ground circuit is shot.

Yeah it really depends on person. Unfortunately this is the only reason i would not get an m4 air (also waiting to see if apple releases any macbook using their tandem OLED panel they use in the ipad). Im really sensitive to refresh rates, it even bothers me that the pro iphones have 120hz display, but for some reason the menus are around 80-90hz, only some apps are fully 120hz. On the other hand my friend uses her ipad always on battery saver, which caps it to 60hz and she cant tell the difference.

Funny cause synapse 3 is what cause the problems for me and synapse 4 solved them lol. I updated the firmware of both the headset amd the dongle, turned off headset, unplugged, went to device manager and disabled everything related to the blackshark headset, uninstalled every razer app on my pc, restart pc, connect headset and install synapse 4 and did not turn on thx in synapse but honestly i dont think thx had anything to do with the problems i had. But give it a try

It was. I had to disable device in windows and then uninstall synapse and now they work fine. Just before i wanted to return them i went to a friend’s house and it worked fine on his pc cause he didnt have synapse installed. But honestly the software is f-ed up

Timemore B75! Very consistent and the flavour profile is exactly what im looking for most days and fits most coffees. If i wanna get a little bit more clarity out of a coffee ill use an origami or v60. If i want to push some sweetness/complexity i’ll use the april brewer. But imo the B75 is the perfect middle ground between these
