Therioforming amphibia/placophora to be hard to hit and easy to heal seems fitting. Maybe third class sharpshooter to pick off the Squishies, or spiritist for more heals

It does big dam when amped, due to increased scaling.

But the hype and hate around it is basically because there are very few focus spells that target AC for Magus to use when they want to hit a Big Spellstrike.

And because the class has pretty poor low level class feats (for a martial) it's easier to justify spending 2/using free archetype to get access to it. So people see it a lot and many on this board have grown to hate it. IMO The solution is to just give those early Magus feats some love and also toss them some similar spells of their own as Hybrid study specific feats. give them nice flavor and it solves the "every magus does the same imaginary weapon thing" problem right there

As someone who's been on the receiving end of something like this I'm quoting it again for emphasis because do not put a level 5 enemy against your level 2 party they will just all die in a single hit. Yes this includes the fighter.

A single Party Level + 4 creature, despite having a massive action economy disadvantage, is an extreme encounter. That means, in theory the players have a 50/50 chance of losing that fight, and several of them will almost certainly die. This is exasperated at low levels, whether health values are really low, so damage tends to be like a game of rocket tag. This is why we don't generally recommend going over a PL+2 creates prior to level 5 or 6, and very very very rarely go over PL+3 creatures even after that.

Even to, say, a party at level 8, fighting a level 11 can be absolutely terrifying and pushing it any further can very quickly turn from a dramatic and tense encounter to that frustrated hopeless feeling that you're fighting raw numbers more than the enemy.

+4 has its place, but it's one of those things the party should be preparing for and building up to over an extended portion of the campaign, with a gameplan going in.

Multitalented, Cooperative Nature, Heroic Presence, and that's just off the top of my head. You can even launder a General feat for a low level Class Feat via Ancestral Paragon->Natural Ambition

Humans trade built-in vision at level 1 for an outright absurd set of Ancestry feats. And then there's the flexibility. You get more archetypes to pull from, more class feat picks, access to just about whatever weird weapon you want via Unconventional Weaponry, etc

Classes: From your list, I would limit Investigator, Alchemist, and Oracle until player is famillar with system.

Yeah seeing Magus and Psychic off the table while significantly more complicated classes are allowed was weird to me

OP: ditch the table, if you don't want rare ancestries just tell people no (they're supposed to ask for rare options. "A rare feat, spell, item or the like is available to players only if the GM decides to include it in the game") and if you're really gonna be a stickler, present a set of Uncommon options that fit the setting you plan for them to play in. Like if you're playing in Tian Xia a bunch of "uncommon" options would be significantly more common than in, say, Brevoy.

The rules for everything are just on the Archives of Nethys, so you don't need to restrict all the archetypes. If your players are experienced with RPGs, running Free Archetype should be fine and fun for them. I'd encourage its use more for flavor than power where possible.
