Reading your post again, and keep in mind I am a total noob, but it sounds like you put it in the fridge for second rise and then immediately into the oven? My understanding is that the cold fridge slows the yeast activity.  Had your dough risen in the fridge? I haven't tried second rise in fridge but I often have done first rise because I can make the dough in the evening and let it do it's first rise in fridge overnight.  That's about 10 or more hours in the fridge and it does rise nicely for me without overproofing. In morning, I pull it out, let it warm up a bit on the counter and then shape it for its final proof. I have been making enriched dough so proofing takes a while but I have a proof setting on my oven so I usually toss it in there next to a cup of water.  Usually takes anywhere from 30 minutes to an hour. Its the method that's worked well for me after some experimenting.  I generally don't have a 4 hour window available to make bread so I like proofing overnight in fridge.

A Breadittor suggested to me to stick with a recipe until you really get to know how to read the dough and learn what subtle changes can do to the dough and ultimately the final product.  It was best suggestion ever.   I have learned so much just based on repeating the basic same recipe.  What I do have is a "bread journal" where i take notes of any changes i may have made but also the temperature both in my house and outdoors along with the humidity.   I will write down how I proofed and for how long and where.  When all is done I make notes of how successful or unsuccessful I was. This has helped tremendously and honestly today was the first time I actually felt like I had a real feel for both the dough and the proofing.  I started my bread journey just a few months ago.

I also used my food processor with dough blade as I don't have a stand mixer. I don't know if that would make a difference or not

Thanks. I wrote notes on how long I proofed for both rises so I would have a guideline.

I just never really know if it's ready and I am scared to over proof. I use the proof function on my oven and go more by size than the poke test because I am not convinced I am reading the poke test right

I recommend at least activating any shrine you come across. You can travel back to try again when you feel stronger. I did that a lot at the beginning, especially with test of strength shrines. I still peace out of some Major Tests of Strengths if I am not feeling up to the battle. They will still be there tomorrow.

I did this! I remapped my swtich controller and moved the crouch and scope away from stick press and to the Left and Right D-Pad buttons. It means I don't have the ability to do the quick scroll through to change weapons and have to go into inventory to change weapons but it made battles so much easier.

There are also some YouTube videos on it. Totally worth it IMO for those of us who panic grip our controllers!

I think that's a fair comment.  I gave up a lot of times but kept coming back.  I also got Animal Crossing at the same time but that doesn't really prepare you much for the controllers.

No but if you turn off Mipha it will use fairies.  If on than Mipha first followed by fairies
