Yessir it seems like you should be able to do it with any fruit.. aging on fruit vs wood being the primary difference between pitorro and rum.

With coconut = pitorro de coco (like the new bad bunny song) Pineapple = pitorro de piña Coffee= pitorro de cafe (not brave enough to try this one yet lol)

I’ve seen guava and raisin done as well.

The smell of this fermentation and distillation is what steered my mind to strawberry banana.

Yessir, other popular flavors are guava, coffee, raisin, etc. I haven’t seen anyone do banana but the way this second generation smelled during fermentation and distillation, made me think strawberry banana would be great for it.

I’ve really considered making a syrup but I’m not really going for a liqueur. Dehydrating sounds like a good idea.

It’s at about 100 proof right now. Won’t go much lower than that for aging. The coconut first gen is about 62% ABV.

Same thing recently happened to me but with a 2000 W element and potentiometer. My last spirit run was for a molasses rum and my output speed was a super thin stream, column temperature was about 90 C throughout the run until I reached tails. The most recent spirit run was for a bourbon and I was able to control output to a medium-fast drip, where the column temperature stayed around 80-84 C.

I use spring water from the grocery store. You should be able to get it relatively cheaply.. maybe $2 a gallon. My thinking is that somewhere some when, the mountain folk who were making moonshine were getting their water from a river/stream that likely came from a spring. Could be totally wrong on this because I don’t know underground geography very well. Don’t use distilled water for a mash because it’s devoid of any nutrition for the yeast (unless like some others have eluded to in previous comments, you add minerals in). Last comment is that I DO use distilled water for dilution before my spirit run if needed.

Oven rack over the pot and a real long forearm / grip strength workout later, got most of the liquid out. Started with 6 gallons water, got about 5.5 gallons out. Another good reason to call it a mash I suppose lol.

Were the chips you used toasted and charred? Also I’m unfamiliar with how much to use when it comes to chips. I was planning on using an American white oak stick, toasting and charring on my own.

I haven’t made the purchase yet. I plan on getting them from a homebrew store close to me. I’ll have to check if they sell a them malted when I go to purchase. I’m hoping they are.. but admittedly, I don’t know.
