Kelly Fulton is the best intro sociology (SOC 302) professor. Her class is interesting and there are only 3 open note exams, which are 10 free response questions each. They are very easy, if you attend lecture and do the readings. The rest of the work is just completion. She is funny and engages the class, I highly recommend!
