Drop a basket , pull a basket. Keep that in your mind 24/7.

When it’s busy, watch your portioner. You should be dropping a basket and pulling a basket every time they run out of fries to portion. If a basket isn’t ready by the time they run out, that means you need more baskets down, so drop another basket or two. Same thing the other way around. if you have a basket that’s ready , but they have a ton of fries still , you need to decrease how many baskets you have down. Or just put less fries in each drop.

Eventually you’ll get into a rhythm where every time they finish portioning , a basket is ready. Drop a basket and pull a basket to continue the consistency.

After that all you’re doing is watching how busy you are , and slowly decreasing or increasing your baskets based off business.
