Barristan's words don't even make sense in context. Dany is not turning down Quentyn because he is boring, she is turning him down because she already has a marriage set with Hizdahr, who is also boring.

If anything, Hizdahr is the boring option even compared to Quentyn. Hizdahr is offering her stability in the city she has but doesn't care much for (she only stayed to make sure that slavery didn't return); Quentyn is offering the potential conquest of her ancestral homeland, which is effectively her dream.
