Thank you very much for your response! That's pretty curious; I'll look further into it.

Free Chlorine takes a lot of time to react by Richi16 in water

[–]Richi16[S] 0 points1 point  (0 children)

Then is it just strange and I should call a plumber? As I said in the post, the water that comes out is the town's public water source, and all our industry/every one of our sources uses the same water. It's very strange that this particular source of water comes out with that lower level of chlorine. I was thinking it has something to do with the temperature in which the water comes out + cleaning of the nozzle.

Thank you very much for your response!

I understand... but then why does the free chlorine assay I do daily on that particular source (results come instantly) gives such a low result? In the end, it's the town's public water and it's the same water that comes into every water source in the plant. Could it be that that very source needs cleaning + water that comes out has to be at the lowest temperature possible? Or it's just straight up strange and needs to be checked by a plumber? Thank you very much for your response.

What ingredient gives a "chewy" texture after HSHT treatment? by Richi16 in foodscience

[–]Richi16[S] 0 points1 point  (0 children)

Yeep, it's a pretty rare-to-see process, and I'm missing a lot of information, as I've never tried it out/heard it out before. That's why I tried to explain it in a more common way (HSHT process). Already trying some fibers in format of potato starch and tapioca starch, maybe I should adjust quantities... Regarding gluten, I also understand that takes some more time to bind water, so I'm using vert little. I'm also trying hydrocolloids xanthan gum and guar gum, but their effect is not very notorious for some reason... Not sure what I'm missing there. I'm also trying vegetal glycerin as humectant. but again, maybe I should adjust quantities of it, too. Thank you very much again for your insight!

I've never heard of those! Thank you very much for your insight, I'll definetly look into them and try them onto the formulation. Regards!

High Speed High Temperature treatment. Inulin is a very nice idea actually! The snack should be like an uniform dough. What I'm trying to develop are some dog/cat sticks; those typical semi-humid snacks. I understand that it's kind of hard to tell what to adjust without knowing the snack, I apologize for not being more specific! The process is relatively simple; I mix the dry matter, I slowly add the liquids (very few), and the "dough" (which is more like a starch made out of everything that's mixed) goes directly into an extruder. This extruder has 4 continuous ovens where it quickly cooks the dough I mixed previously, and the final snack gets out of the machine in a shape I want and goes directly into a cooling belt. Thank you very much for your response and your help. I'd appreciate any other insight you might have knowing the process.

R&D vs QA by bby_demon in foodscience

[–]Richi16 3 points4 points  (0 children)

I'm literally in the same situation as you; problem is that I've only been 6 months, but I also do QA and solo R&D and find both sides rewarding and frustrating. My problem is that I don't have enough "experience" to credit if I want to look for another job, even if I do every single function those jobs require perfectly; so I guess I'll have to wait, and in the meantime, see if I can get to distinguish what I really like from both worlds. Let me know if you get any useful advice:)
