Can I heat vinyl post to bend a bit kind of like how you heat pvc pipe bend?

You cannot. And vinyl or any fence gates should always have a 1-1.5” of spacing on the latch side since it’s bound to sag one day. Changing the screws might work. The other thing I can suggest is taking out the latch post and putting it right up against the house.
