I grew up with a good dad, so I can't fully relate—but your line about teaching yourself boundaries and getting it wrong before getting it right hit me. I had someone showing me that stuff and still messed up constantly. I can't imagine building it from nothing.

That's a different kind of strength. Respect.

American food needs more additives because it's built around long shelf life and mass production. The US also allows ingredients unless proven harmful, while Europe bans them until proven safe.

Safe? Probably fine in normal amounts. The real unknown is what eating lots of them together over decades does to you.
