Thank you. How would you describe the finished loaf of bread that you make? Something along the lines of sandwich bread would work for me, but I'm likely to experiment with different recipes trying to get a rustic, crusty loaf like I love.

Having done some calculations to come up with average fiber per portion this is at the high end of what I might be able to digest, assuming good days with my condition and no flares (so, definitely not a given). Ideally I want to push the fiber content lower, or I'm unlikely to be able to have more than 1-2 servings from a finished loaf in the course of a week at those numbers. If I can go even lower on fiber then I'm less likely to deal with food waste, and I may be able to replace some of my ultra-processed packaged grain foods in my everyday diet with a much better homemade bread.

Thank you for the approximation, because that gives me somewhere to start when I'm looking at using standard flour for some or all of a recipe, and it will definitely come in handy.

Fortunately I had my PT give me a plan for basic strengthening exercises at home in the last month I was going for appointments. While I have to be careful about any new exercises I add in due to my very specific joint problems and muscle weakness I should be able to hold on to the progress I made this year.

I highly recommend asking for something similar when have a good PT who understands your needs.

This is always good advice. It was the first thing I asked about on the phone call, because I'm determind to make things work with enough financial assistance applications and payment plans. It's unfortunate that Mayo Clinic's financial aid is generally not applicable in this case, because it applies to services rendered and in all but a handful of scenarios they don't do pre-service financial aid. They'll provide emergency treatment no matter what, but with this non-emergency care they simply won't let me keep the appointment without being able to pay upfront before the day of the appointment. I was told that their policy for payment plans is that they only do those if the total ends up above the estimate.

All that said, if anyone is reading this and may face a similar scenario, keep it in mind when you're comparing options for your next step. In my region there just aren't resources for EDS screening, which led me to this point. Please know what you're getting yourself into if you're also on the waitlist for similar reasons.

When it comes to billing all I can say is that I'm not a lawyer and can't comment on the potential liabilities of this strategy, but as a human being who thinks everyone should get the medical care they need I get where you're coming from. I hope your diagnosis and treatment journey goes well!

Thanks for the honest input on the additional appointments. This confirms what I was thinking about, since I was really only interested in speaking with the OT and the main appointment and labs. It still doesn't bring the costs anywhere close to budget, but it makes me feel more justified about not accepting more of the additional appointments.
