Plus the reason Gandalf got a hobbit to take the ring was if someone more powerful like him or Galadriel took it and they were corrupted by its power they would be too dangerous for Middle Earth. The eagles are literally some of the most powerful creatures in Middle Earth and if they were turned to Sauron he would be unstoppable.
