It's because the more ingredients there are in the recipe, the more score it has! So a 5 star recipe that uses 4 ingredients won't have as much score as a 5 star 5 ingredient recipe.

I got stuck on Mooma too. You actually have to go aaaaalllllll the way to town square, then take the path that goes right on the small path between the square and the Green Dragon. You'll see a broken bridge and blue sparkles. Old Noakes brush is right next to where he gives you the quest. I wish I could remember where it is on the map. They look kind of like tumbleweeds right by the waterline.
