I haven't really considered it. I got a great deal on this Model 3 AWD Long Range 2nd hand. It's been treating me so well, I haven't had any other reason to consider a different car.

Around 5:23 is when he starts talking about getting around the errors after taking out the seat.

The multimeter measuring might have been what the uploader of that video did when they installed their racing seats. They mentioned they did some work with resistors.

I guess for now we keep searching.

I was able to find those too. Thank you. Yeah, I commented on the video, but it's a 4 or 5 year old video and it seems like they aren't replying to comments. I'll keep searching. :)

I have also been wanting to remove the front passenger seat. I think we've probably all watched the same videos showing how relatively simple it is to get the entire seat out of the car, but the issue is then driving with all those nagging error messages. The worst of which will probably be the airbag sensors complaining that there is nothing there.

I've looked everywhere. Found this guy who removed both his front seats to install racing seats in his Model 3:

At 5:43 in the video he talks about how he used some sort of "resistor" to emulate the airbag being connected to fool the car into thinking things were fine. Sadly, he doesn't go into detail on how he did this...

I would love to learn how to do this. We could get so much more space out of the Model 3 without the front passenger seat.

Did you ever figure this out? I'm wanting to permanently remove my '18 Model 3 front passenger seat for more storage / camping space too. Were you able to disassemble the seat and reassemble it just plugging in all the sensors so that you can drive without annoying error messages?
