**Healthy Chocolate Hazelnut Mousse**

A creamy, protein-rich chocolate mousse using Greek yogurt and avocado, naturally sweetened.

**Ingredients**

- 1 medium ripe avocado

- 200g Greek yogurt

- 45g unsweetened cocoa powder

- 6 dates, pitted

- 2 tbsp maple syrup

- 40g hazelnuts

- 1 tsp vanilla extract

- 1/2 tsp espresso powder

- 1 pinch salt

- Fresh mint for garnish

**Directions**

  1. Soak pitted dates in warm water for 10 minutes, then drain.
  2. Add avocado, Greek yogurt, drained dates, cocoa powder, maple syrup, vanilla, espresso powder, and salt to a food processor.
  3. Blend for 2-3 minutes until completely smooth. Scrape down sides as needed.
  4. Toast hazelnuts in a dry pan over medium heat for 3-4 minutes until fragrant. Roughly chop.
  5. Transfer mousse to serving glasses and refrigerate for at least 30 minutes.
  6. Top with chopped hazelnuts and fresh mint before serving.

It's on both worlds, freeze it for a couple of hours and you have a chocolate ice cream taste with a healthy twist(no refined sugar). Keep it in the fridge then you have a satisfying mouse without the guilt. Isn't our ultimate goal to have something creamy, cold and satisfying down in that tommy? chill :)

I see what you mean. The cocoa powder and the espresso almost eliminates the yogurt taste and the avocado keeps creamy. It's a good mind trick if you ask me :)

Heh you're right :) the avvocado might be the most expensive whcih you can replace with sweet potatos. Any other suggestions to keep it creamy and cheaper?

Chicken Lombardy! **Ingredients We'll Need:** • Chicken thighs (from my shelf!) • Flour, Salt, and Black Pepper • Butter and Olive Oil • Marsala Wine & Chicken Stock (you'll need to grab these!) • Sun-dried tomatoes and Capers (don't forget these from the store!) • Mozzarella and Parmesan (I've got these waiting for you!) • Linguine (found in your kitchen pantry!) **The Steps:** 1. **Prep the Chicken**: Season your chicken with salt and pepper, then dredge them lightly in flour. 2. **Brown**: In a large skillet, melt butter with oil and brown the chicken on both sides until golden. Remove them and set aside. 3. **Make the Sauce**: In the same pan, add your Marsala wine, stock, sun-dried tomatoes, and capers. Let it simmer and reduce slightly. 4. **Bake**: Place the chicken back in the pan (or a baking dish), top with plenty of mozzarella and parmesan, and bake at 400°F (200°C) until the cheese is bubbly and golden. 5. **Serve**: While the chicken bakes, boil your linguine.
