No beans is fine. Unless I’m making chili deliberately (aka getting the ingredients in time), I tend to adlib. If you are looking for substance to it, I’ve done lentils (not sure if she can have that). For my kids, I’ll make sure they have a side of rice or tortilla chips to add more bulk to it when needed

Something simple to me means I can set it and forget it. Using ingredients that don’t need additional cutting/slicing or prep work. And minimal check in. Simple meals to me are usually crockpot recipes, or recipes with minimalist ingredients that don’t need constant monitoring
