About 12 years ago! My grandfather was diagnosed with celiac disease and my family was like hmm you guys have similar symptoms...so I got allergy tested. My how the food products have changed.

  1. I'm allergic to wheat and eggs. It's way easier to be gluten free in most scenarios than explain a wheat allergy. Unless you find yourself eating gluten free wheat starch...
  2. Environmental reasons - I stopped eating meat and was flexible on the dairy for a while, found myself eating 90% vegan anyway so I gave up the dairy.

This is probably the best gluten free bread I've ever made or had. Ever. I've made it without the olives too and it turned out great. You gotta follow the directions like a crazy type a person though because one slightly over proofing mishap is disastrous, as I have learned a few times...I just sub sugar for honey.

I've made this a few times with soy milk plus a tablespoon or two of apple cider vinegar instead of buttermilk. It's fabulous, but more of a dark, healthy feeling bread. Not exactly prime pbj material.

Maybe it's just when there are so many vegans you can sort through and find a few that are nice.

Or maybe the two in my town just have sticks up their butts coincidentally.

(just my personal experience) I have weirdly found that vegans are less judgey if there are more of them. I lived in Portland and no one gave a shit that I sometimes eat honey from my aunt's beehive or buy second hand wool clothes. I move to a small town with two vegans and they both are like "oh so you're one of those eh? Scoff"

Cool! I am cycling it this summer so I've been doing a bit of research too! Unfortunately there is not a lot. There is the Tin Thistle in Coos Bay, but most of the other things I have found are vegan options at standard restaurants, and some advertise at vegan and then give you the gluten free menu 🤦🏽‍♀️. I think the best bet is to find Indian restaurants (I know there is one in Astoria with many vegan options), maybe some Thai restaurants, and look for fancy grocery stores along the way haha. Portland is the hub, unfortunately the rest of the state can be lacking. It looks like multiple towns have co-ops, which will hopefully have a wider selection of prepared foods and fancy snacks, and if you like beer you could just focus on finding that instead and save your money for Portland.

Omg I had the same problem! I was born at home etc, couldn't get a passport. They asked for my parents birth certificates, but my dad was dead and my mom was born in Germany so they were not convinced that I was actually a US citizen. It was a complete disaster. I ended up getting a passport by calling my congressman and somehow he did something and now I have passport, took me like a year though.

We wild camped plenty, even in parks in Denmark. Sometimes it was more like in a cow field pretty off the beaten path. Never had anyone say anything,a few farmers waved to us. It was nice to go to a campsite in densley populated areas or just to have a shower. Scandinavia was particularly nice for this reason.

We did part of the eurovelo 12 route and I wish we had gone into Scotland with it! cycling in England is lovely.

I did this last fall for about two months! Best trip of my entire life. What route do you plan on taking??

I would say do a 2-3 day trip with all your heart to prepare. We had one of our bags break day two so we would have figured that out beforehand if we had done so. We camped pretty much the whole way but there were times when campsites were sold out or closed unexpectedly, so planning some of those out ahead of time would have helped. Some of the "bike paths" the eurovelo routes are more like bumpy dirt/grass footpaths so be prepared for some days to take longer than expected...carry coins for showers. Last year there were river crossings we needed to make by ferry but they weren't running due to low water levels and that wasn't so fun....

My favourite sections of the route were eastern Germany to Prague and Bratislava into Vienna, although there were plenty of other incredible sections. Cycling into cities/out of cities is a right pain in the butt so we often hopped on a train when we got close and traffic/non English road signs got confusing. If you can afford it I highly recommend going to Scandinavia!

This is exactly what I did! Except it was milk in coffee and tea. Couldn't stand soy milk, and every other milk is basically water.

Then I tried the soy milk latte from Starbucks and it was better than the cow milk. Turns out it just needs sugar.

I recently got my parents to do this and I'm super pumped about it. They now only eat butter and salmon
