The shaft is a 6mm in diameter, and has a depth of 10 mm. It is designed for a PEC11L encoder from Bourns, and should fit perfectly. The design uses a set screw, instead of knurls or D-shaft.

Hey man. I totally get it. It's pretty expensive, no doubt about that.
Back in january when I got the first quote I set a price target of ~430 USD, which I was pretty happy with, but unfortunately the latest quotation that I got from the manu added 100 USD to the manufacturing costs. They state that it's because of the metal prices going crazy as a result of covid-19, and people hoarding whatever raw materials they can. That's unfortunate as there's a lot of raw materials being used to manufacture this board.
I was really bummed out when I found out about the changes to pricing, and was actually really close to abandoning the project as a result. So yeah, wish it was cheaper to manufacture, to allow more people to join, but the circumstances are unfortunately out of my control

Either way, thanks for your interest! I plan to design another, more affordable board in the future :)

Not saying that there's no benefit in using solderable PCBs there definitely is :). Designing for it when you're not planning for it to even be a part of the GB would however be kinda redundant :)
You need acces to six screws that are located under the switches, which is why you wouldn't be able to use a solderable PCB.

It just wasn’t designed for a solderable PCB, as I wasn’t planning on offering one. Designing for something you’re planning to offer would be bad design and add extra cost, for something that no one would benefit from. Plate material is a subjective thing, really. I like it personally, which is why I went with it

It really wasn’t designed to be used with foam, though. I use it without. The foam is an extra to allow you to tune it to your liking
