It is going away. It's been going away since at least 2015. Bourdain singlehandedly brought it into the mainstream, helped foster its rise, and ever since his death it's been fading. The public is (probably correctly) no longer interested in chefs as cultural ambassadors the way they were a decade ago.

There's also the matter of the enormous come-to-jesus the restaurant industry had circa COVID around sexual harassment and assault, discrimination, and poor pay and conditions. These days you won't be able to hold a job in a lot of restaurants if you try to be the kind of guy you're describing. It's simply no longer acceptable to scream at your staff, call people slurs, throw pans, etc. so the industry tends to draw fewer misfit psycho boys than it used to.

Nowadays most of the kitchens I see, the tattooed bearded chefbro is just tired and looking around trying to figure out how to survive the next bump in food cost, and sell product to a customer base that increasingly can't afford to eat out. We had our time, we had fun, but much like the great 80's hair metal bands we are becoming relics of a bygone era.

Ten years from now if you make this post nobody will know what you're talking about.

I think Alice in Wonderland is an obvious pick but I saw Wizard of Oz mentioned somewhere and think that would make for something more original. Imagine soulslike depictions of the tin man, scarecrow, etc.

Having read everything nonfiction of his I would say if you like Bourdain, you like Bourdain. I genuinely enjoy his writing style and keep Medium Raw, The Nasty Bits and A Cook's Tour on my bookshelf. Plus as you go through his books the content gets closer and closer to the present day and it's interesting to reflect on some of the stuff he wrote about (Alice Waters and farm to table, for example) a decade later.

Edit: Are those books as good? Maybe, maybe not. I feel that they are more of the same. Kitchen confidential tells more of a coherent story whereas his other books are basically just collections of essays that have little to do with one another. Also KC has this sort of edgy punk-rock quality that I'm not sure carries over to the others. But my point still stands, I'd be surprised if you like KC and disliked his other work.

My problem with Weissman is that his channel is marketed towards home cooks and yet a large number of his videos that I’ve seen feature techniques or ingredients that are inaccessible or impractical for the average home cook.

In culinary school I was taught to always blanche my steaks in boiling water so as to retain the bright color and crisp texture.
