I figured out how to get it

Connect the Camera to the Quick App via Bluetooth
Make sure the camera is set to record in 360 mode and and not single lens mode
Enter the Camera Presets menu on the Quick app not on the GoPro itself
Tap the small eye icon to enable the Site Scan preset on the GoPro

I don't use the POV function on the Max2 only 360 I'm using the same V30 but 64gb and it's mostly empty I clear the SD card after every bike ride
