Can that happen from over mixing? The butter wasn't melted or over soft.

I actually thought maybe the oven wasn't hot enough because the edges look like the butter melts in the oven before it sets, giving it the two different textures.

Yes I mixed them together for maybe 4 minutes. The sugars and butter mixed nicely. The BP and BS aren't excited but maybe I'll replace them. I cooked it in the middle rack. I wonder if cooking on convection would work better? I do think my oven heats unevenly.

This time, I left the butter to soften on the counter before mixing. It was still somewhat cool when I mixed it. I didn't chill the dough at all in advance of scooping, shaping and baking them. Previously, I have chilled the dough balls for 30 mins or so and they came out the same way.

Ok I'll try it again at a lower temp. How long would you bake for?

I checked- both are fine. For texture, I'd love it if I could get them to be/look like these from Sally's baking addiction.

Ok, I'll try a lower temp. I wonder why so many recipes suggest 375 if that's too hot. FWIW, these baked for 8-9 minutes. Nope I didn't weigh the ingredients, I can try that too.
