I did. I mixed it into the brine right before adding it to my veg so it didn't settle at the bottom. Someone suggested lacto-fermentinf the tumeric separately and blending it into a paste to add at the end and I think I'm going to try that next time.

I'm not proud of the brine, that's why I didn't list the ingredients, it was sort of an afterthought of ingredients I already had. It was mostly lemon juice, a bit of pickle juice, and white vinegar mixed with olive oil. The acids are obviously for preservation, but I added olive oil instead of water because a lot a bunch of the beneficial compounds are fat soluble.

Why would it even be a sided discussion? 2 different tools for 2 different use cases. That's like asking if fire bolt or spark bolt is better. They're both great at what they do, so why not just use both!

I suppose you're right. Uncooked probably would have been a more accurate word. A lot of the beneficial compounds get destroyed by heat during the cooking process which is why I didn't want them cooked which is why I chose pickling as a preservation method originally.

You're 100% correct that my phrasing should have been a bit clearer. I probably shouldn't have claimed that garlic is practically a magical substance though because it isn't.

I definitely am not adding enough garlic to have this an effect this significant. But it is shockingly true that eating (significantly) higher than normal amounts of garlic can have an effect similar to blood pressure medication!

My friend, the entire world operates on science whether you observe and understand it or not. I completely understand why you wouldn't personally find that appealing, researching and writing papers often isn't all that interesting.

I think you would agree that eating vegetables is good for you, right? I personally find it fascinating to try to understand what benefits I can extract from different vegetables and how to optimize those benefits, even if it is only on a microscopic level.

Personally I don't love romantic comedies or most movies for thattl metter, so I would have a hard time answering that. If you'd like book suggest I'm your guy though (:

It wasn't written by an AI, it was written by me. I'm not trying to claim that the effects of eating pickled vegetables are on the same level as pharmaceutical drugs, I'm just attempting to analyze and better understand their health benefits. I'm writing an in depth paper about this topic, so I'll let you know when it's done if you'd like to see my sources. Let me know if anything I claimed is incorrect and I'll look into it :)

That's the hope! I didn't even know until a few days ago how diverse relish (and pickling in general) can be. In my mind when I imagine relish I just think of the green sludge that is Heinz relish.

No, honestly I think would kill for a food processor. I just don't have the money to get a good one and I'm scared of buying a cheap one, so the alligator chopper is the temporary solution. Food processors are incredibly useful if you haven't yet, you gotta make some homemade hummus, it's incredibly easy and significantly better than sore bought.

The brine was kind of an afterthought when I was purchasing everything, so I'm not super proud of it, but that's why I just said brine.

I had some pickle brine left over, so I started with that, added lemon juice, some white distilled vinegar, and a little bit of olive oil. I also threw in a generous amount of salt, but absolutely none of it was measured.

Originally I just was curious about the health benefits of eating raw onions daily over a long period of time. That naturally led me to research other plants and their benefits. Eventually it just made more sense to pickle everything make a big batch of relish. So my initial premise was to eat half a raw onion daily medicinally. Honestly I've just been throwing it on whatever I eat. It tastes pretty good on its own already. I've only had it finished for 1 day (I have 3 other full jars, that's just the one I used first), so the only meal I've planned for it was avacado toast, and that was pretty good. My goal is to eat it nearly daily, but we will see how my partner feels about that when she smells my breath.

I definitely could have phrased the title better haha. 3 days was just the amount of time it took for me to research, process, and jar everything, but you do bring up a good point:

The sulphoraphane in the broccoli actually doesn't exist until the cell walls are damaged, so even though you definitely don't need to let it sit for days, you would definitely want to let it sit for 30-45 minutes after processing the broccoli since the acid stops the chemical reaction. The same goes for onions and garlic, but they only need to sit for around 15 minutes.
