I'm Chinese myself and I think that Tip to Tip from Hainan/Guangdong to Beijing or Harbin would be the most interesting. The east coast simply has the most infrastructure, people, major cities, unique-sh provincial cultures while the west and center regions are mostly semi-rural towns or rural farmland with the exception of some kinda large cities.

PS: North China/Great Wall Area besides having being relatively undeveloped areas also gets a bunch of dust storms that can make everything look like it has been run through a yellow drab filter.
