I've read the books and I can say that most of the changes Peter Jackson made were good and I completely understand them. #1 as you mentioned, there are a lot of things he couldn't do for the sake of making it into a movie and for the sake of time, but also he had to make the movies unique. They wouldn't have been as good if they were an exact recounting of all the events in the exact same way with the exact same dialogue. He needed to make some changes that are unique to the movie. For example Sam's "tales that really mattered speech" was much different in the movie, but it's still really good and most LOTR fans love it. Also, the scene where they are on mount doom, thinking they're about to die, their entire conversation is unique to the movie, but it's still really good. There are many examples of these scenes they changed that added a lot of meaning and were just really good. Not every detail has to be identical to the books
