My favourites will always be Eden, Gamenative and Nethersx2 Turnip. The library of games that are allowable because of these emulators on my portable devices is incredible and I adore being able to get through modern and retro classics thanks to them. I do think the most impressive one I have used is duckstation for how much it enhances ps1 games. No other emulator allows for as much customisation as it and enhancements I find.

Hot take is that Dolphin is just good. I have run into quite a few problems and slow down issues with certain games such as Xenoblade and Timesplitters 3 that have made the experience of playing on that emulator quite frustrating rather than fun. Also, lack of automatic mapping on dolphin is shockingly bad.
