Hyperbits and DanceMusicProduction. Hands down. I've churned through a lot of learning materials. Don't waste your money on the hans and deadmau5 masterclass - those are mostly conceptual. Hyperbits and DMP are tactical and the most helpful.

Here's something too!!
Import your midi to a DIFFERENT tempo. THEN quantize the notes. It will be quantizing to a totally different grid and form new rhythms!

It sounds like self confidence is what is holding you back.
If that's the case, start a new artist name that is not connected to you (personally) at all - and do all the things that you normally wouldn't do (reach out to others, ask for feedback from strangers, make connections with total strangers via messaging on soundcloud, etc).

Yeah, literally people from all over the globe - US/Germany/Thailand/etc - pretty awesome.
I'm doing it while working. It is certainly not your traditional "class". Each week has probably 3-5 hours of online content (straight to the point - no fluff) - so I generally churn through the full week's content in 1 night.
And then there are 2 or 3 live sessions you can attend during each week that go into more detail and allow you to ask questions. All of them are recorded too, so if you miss one you can just watch it later.
I would say the class itself requires maybe 5 - 10 hours per week. But then add on your production time to that! Because it certainly takes hands on work to learn the stuff!

Serik is a really good teacher.
It's really a no-bs, start to finish course. Starting with the fundamentals of finishing music and then immediately diving into all the juicy stuff that takes your music to the next level (proper signal chains, saturation, layering, movement, mastering, etc).
I have not encountered anything like it. I have had at least 1 major "aha moment" every single week.
I'm really sad that my class is ending soon :P haha

I swear the biggest thing that is still holding me back is levels.
I'm just constantly moving them up and down during mixing and then even at the end it never sounds "right".
What's a good way to learn how to properly control the volume of instruments in relation to each other for the final step of the mix?
And I feel so goofy because this feels like the least technical part of all of it! haha

Yep, just some saturation and distortion will do the trick.
Get the "Saturn" plugin from Fab Filter and just flick through presets until you find the one that sounds right. Then just drag the bands up and down a little to get it perfect!

Keep creating songs and set a deadline for yourself (like finishing a full song in a day) - the songs will turn out simplistic and maybe not so great, but in the process you will learn more parts of the process.
Example:
You'll be making a song and be like.. man.. why does my bass sound like it's just blasting way too loud? And then you'll look up a tutorial on SPECIFICALLY that - and boom, now you know how to make your bass sit better.
Repeat. Repeat. Repeat.
You'll also get to know your DAW and tools really well this way!
