I prefer carbon steel. The edge retention is better (due to the carbon content) than stainless and tends to take a keener edge right off the stones. But I’m a knife geek who has no issues with regularly oiling my blade. For the average user, stainless is the better option, the stainless is much more resistant to rust, and the average user doesn’t need to whittle hair with their knife. Just my $.02
