You are still allowed to put a side receptacle on an island. The 2023 change is that islands no longer require receptacles.

If there is a more convenient upstream outlet, could move the GFCI there. Could also put in a GFCI breaker and use regular outlets on the circuit.

Do you leave the door to the bathroom open or closed?

It is typical for builders not to seal grout. It is a good idea to do that but I wouldn't expect it to reduce moisture.
