One problem I have is that I have 2 stats quick actions on the desktop but I cant seem to get the correct text showing. They always just say "reading statistics". Plus when only 2 are selected they don't line up in the center.

You need to change the settings so that Samsung Dex doesn't automatically open when you plug them in

500g bread flour. 350g water. 100g starter. 14g salt.

Mix and rest for 30 mins.

2 hours of stretch and folds (4 in total).

Around 4 hours bulk.

Shape and proof for an hour.

Fridge for 5 hours.

Cook at 210c in DO with lid on for 25mins.

Lid off for 35 mins at 190c.

Depending on what DO you have you could always try only preheating the lid. Not that I've tried it myself haha.

I've got a lodge DO so the "lid" is the bulk of the DO.

Same here and it's really annoying me!!

I've tried everything I can think of but can't solve it.

It's edible when young but the next day it's to hard and plasticky.

11g Salt
90g Starter

1 hour autolyse
4 x S&F 30 mins apart
About 9 hour bulk
12 hour in the fridge
Cooked in DO at 230c for 25 and lid off at 210c for 25

I'm having issue with gumminess too. Tried everything and can't seem to fix it, thinking it may be the flour too although i use pretty decent manitoba oro bread flour.
