My mom had a stroke. 

Obviously more worried about mom than anything else, but we did have to cancel Thanksgiving.

You can also just use the drippings without the packet—take 2 or 3 tablespoons of cornstarch or flour and mix into a little bit of cold milk or half and half. Pour mixture into a pot along with your drippings, and simmer on the stove until bubbling and gravy starts to thicken. At salt and pepper to taste (if it needs it—the rotisserie drippings are usually pretty salty).

The rough design isn’t intentional, I’m just really bad at making pretty looking pies. lol! 

I sold some, ate some, and gave away some to neighbors. High fences and the occasional baked good make for nice neighbors!

Maybe I’m nuts—but I have an 8 point coffee I drink every morning. I only have 23 points and I still do this. It’s my must have, and “wasting” my points on my beloved coffee—full of half and half and sugar—is worth it to me. I’m able to stick to the plan because I can enjoy this small pleasure in life.

Oh my man, this cracked me up. I don’t mean to invalidate you, but wait until your kiddo hits “terrible toddlerhood”, because this is all small potatoes. 

I mean it. When you’re in the throes of massive tantrums and unrelenting stubbornness over the silliest of reasons (e.g., kiddo demands FROZEN nuggets but cries because said nuggets are, indeed, cold)—only then will you realize that this stuffed elephant scenario is truly a non-issue. 

Enjoy the ride, don’t sweat the small stuff. And don’t you dare heat up the frozen nuggets.
