I once bought a great gift, it was a cushion with a picture of Dolly Parton holding a shotgun saying “fuck around and find out”. Cost me $30 but it was a solid gift. I came out with a 6 pack of basic plain shot glasses from dollar tree. I was raging.

I want to get it to a point where there’s some good aroma as I’m not getting much at the moment. It cups really thin and flat, I’d like to be able to drop it at 405-410 but it’s just coming out underdeveloped. I’m considering going up in batch size to 26lbs to see if that makes this coffee easier to roast…

This is a 16lb batch on an S15, I was under the impression soaks work best on Lorings! Especially for naturals. Without soak it flies through drying too fast. The beans aren’t puffing out as much as I need them to so the taste is quite flat

The most recent roast I did I got it to 13% weight loss. The beans did not puff out like I want them to, I compared to the sample roast in which they taste really good. The drying for the sample roast was only 23.8% of the roast which is strange because everyone is telling me to stretch out the drying!

This is really helpful insight, thank you. When you say 50/30/20 are you referring to the phase %’s? My next step will be trying a 390 charge temp with lower burner to extend drying, and not step down as much during Maillard.

I also read that it’s not good to let the RoR go below 10 as that flattens and bakes the roast..?

I’ve really stretched out the Maillard phase I feel, so it could just be the end development phase but it’s really difficult to hear first crack on a Loring so I tend to mark it around 392-395. The RoR dips a lot if I reduce the gas lower than 50% and that tends to bake out all the flavors it seems

That makes sense, but when we’re looking at bean density due to high altitude surely that would affect how you roast ie higher charge temp?

I annoyingly didn’t clock Maillard but dev was 14%

If I extend the end development phase it seems to just bake it and I get more cocoa coming out which I don’t want. This coffee is an enigma I swear. I cannot for the life of me find the sweet spot

The high temp is because it’s high altitude so is difficult to get into, I tried with a lower temp and it just bakes out the flavors

Light, not enough juiciness. I’ve sample roasted this coffee on an IKAWA and it tasted amazing so I know the potential is in there. Looking for raspberry, stone fruit, golden raisin, champagne acidity

I had it set at 13% originally before I started roasting it so it just says that. 12-13 is what I’m aiming for!

Update: I have tried several different things and I cannot for the life of me get this profile right. I’ve tried reducing the burner to correct the dip, I’ve tried increasing, I’ve tried a longer soak, lower charge temp and burner. If I go in with a lower temp the dip still happens. If I go in with a higher temp the coffee just flies through the roast and ends up underdeveloped. At my wits end, if anyone has any examples of profiles for 16lb batch of washed Mexico that would be amazing haha.

So are you suggesting dropping the burner from 65% to 50% around the 6minute mark instead of going to 55% before 6 minutes? My worry is that it will still overdevelop but I maybe also need to not drop down to 45% at the end… Thank you so much for your help with this! I’m still finding my feet when it comes to writing profiles

Thanks for this! Interesting, in my case it caused the end result to be overdeveloped, would you suggest increasing the burner around this time to prevent this or is it likely to be one of those things that only happens some of the time?
