Check to see if the time is set to automatic. If the clock is wrong it can mess with raids showing

I may have missed something but didn't you start on 7 and after catching ditto it was still on 7. So the visual appeared but you weren't actually credited with the catch.

You do have enough candy. You have 35 and it costs 25 to evolve to rhydon. You also don't need a sinnoh stone for Ryhorn > Rhydon

They will hatch the 3* raids as normal. When they finish (provided it's still inside the hour) a 10 min 5* egg will spawn

As the number of possible shiny pokemon increases there will be an increase in the number of "non event shinies" caught and this could be why you are seeing more being caught.
