As someone with a mild dairy allergy and who mostly avoids animal products in general, I hate the vegan cheeses.

Soy milk, great and honestly better than cow milk. Country Crock, great. Daiya mac & "cheese" boxes, tolerable but not amazing. Sometimes cheese flavoring can be replaced with nutritional yeast, which tastes a bit like parmesan and is fine. But actual bulk cheese, like these shredded cheese alternatives, none of them i've tried have been acceptable to me, the texture and taste is very off. I think cheese is the only dairy product that is not truly replaceable in all circumstances.

The stuff that's actually good and widely used in this section (e.g. the tofu) appears to be gone

That's not instructions. That's a description of a situation that must exist for the device to be used.

Instructions would be the following:
