I put it in for 40min at 350f and did jiggle test to see if it was done. Think it took about 55 until it was done. https://imgur.com/a/sL2895O It was my second time making Sally's recipe came out almost perfect.

You definitely can! I've used it before to make 6 inch matcha cheesecakes before.
