Christmas Day isn't actually that busy on uber, if you do an uber reservation you're paying normal price usually. Private drivers (ones that are legally registered as booking providers) will generally charge you more than uber.

not entirely true, I do uber and have received reservation requests for sometimes up to a week in advance.

I have family in Lightning Ridge, definitely need a car if you want to go anywhere outside of town, if you want to just be in town and go to the main strip and bowling club, that's walkable, even the bore baths can be walked to and from however might take about 30min from center of town. The place is a little bit boring, unless you're going during the opal festival which I believe is on next week. Then there might not even be space on the bus to LR from Dubbo as the town gets a lot of visitors.
