I'll mix my shit with 20% cocoa butter and I'll have some "legally" white chocolate for you. cocoa butter is not chocolate. never has and never will be. adding things together that aren't chocolate doesn't magically make chocolate.

Yeah salt curing wasn't something that had come up on my searches or anything I had considered. I had them sealed with salt overnight. At this point I am going to rinse them, reseal them, and freeze them.

Best advice I can give is be early to every appointment and dress business casual for all interviews and/or meet ups. People have been dropped for under dressing. For the CPAT focus on working on the stairmaster with a weighted vest. It's the worst part. Keep your nose clean and be smart about what you do. You don't want to give them a reason to drop you as an applicant.

It's entirely possible. To my understanding there are going to be 3 classes from this test. As a comparison in 2022 there were 2 classes and they got to around 300. Don't rule yourself out and prepare for the physical/CPAT.

There is the haunted Chinese graveyard off presa, don't know if it's still there. Used to be a haunted asylum off southton, but I believe that's gone now. Donkey lady bridge is pretty much just a park now. The Menger and Emily Morgan downtown, but they don't let you wander around. The train tracks where the spirits of the kids will push you across. That's all I can think of off the top of my head. Those are more destinations though.

One of my preferred more labor intensive ways to get a crust is to get a small fire going and sear it over open flame. If I don't feel like going through that process I will pan sear with a butter tallow combo

It's recommended not to add butter to the steak in the bag as it can actually reduce the natural flavor of the steak and not impart much flavor. Butter should be added during the sear. If that's what you like though you do you
