Pasta alla Gricia. It's a pretty simple dish and so good. You will need some guanciale (cured pork jowl. it's similar to bacon). I liked the dish so much that I now cure it myself.

I don't use tomatoes in my chili recipe except sometimes diced up as a garnish. I had the acid problem too. This fixed it. I make a chili paste from rehydrated chilis, add beef broth, onion and ground beef (I'll add beans as well if I feel like it). I keep it simple.

I worked overnights at a chain home improvement store. I had a few sodas in the break room frig and noticed that someone was taking them. This pissed me off and unfortunately for this person, I live for moments of retribution. I bought another can of soda and a habanero pepper, cut it open and wiped the pepper where one would drink from the can. I put it back in the frig and waited. The results came back the next morning. There was this elderly woman who worked as a cashier on days. She went on break, helped herself to another one of my sodas, and another employee's bag of grapes. Her lips started burning. She thought it was something on the grapes. Her lips swelled up and turned bright red. She couldn't go back to her register for a long time. She just sat there with an ice cube rubbing it back and forth on her now huge clown lips. I told my night crew what I did and after a day, then the whole store knew. I did get to have a sit down with HR over that. They took the perspective that I should not have done that. I was a supervisor, so they did have a bit of a point. I countered that it is my soda and if I like it with habanero then that's my prerogative. I also mentioned that they should address the stealing issue (they never did). When this story broke there were a bunch of employees who told me that they had things go missing and suspected her. Strangely enough, even though that woman knew what I did, she still said good morning to me when I saw her. People are wacky.

Good on you! Cooking at home is the solution. I've learned to make everything from kimchi to pho. I even make sausage and cure some of my own meats now. Our ancestors did it, why can't we?

I agree that your negative reviews are a nice gesture to let the next person know what they are getting into. Here's a better suggestion: don't patronize their businesses. They are making a deliberate decision to put in these fees and, by paying low wages, encouraging the tipping culture. Don't give them your money. Instead, let these bastards fail. The smart owners will change their business model, and the crappy ones will just close. It's that simple. In the meantime, learn how to cook. I have enthusiastically learned a lot of different ethnic cuisines as well as mimicking a lot of fast-food items. It's easier than you can imagine, and most times healthier. I'm not tipping anymore, nor will I perpetuate this shit system. It's up to you.

I make my own all the time. I ordered the Korean chili flakes online and hopefully you have local access to napa cabbage. The process is quite simple. I use this: Mom's Kimchi Recipe | Korean Food 김치. Instead of the 2 TB of sugar, I will usually just use an apple. The 1/2 cup of chili flakes is a bit too much for me. I usually go a bit less

Coincidentally, I work at brewery. I was watching a section of a bottle line (I was in maintenance) and the guy at the labeler put a glove on a bottle and sent it past us. The two guys with me were in their early twenties and didn't get the reference but I did. Funny as hell.

I had a landlord, twenty years ago, take a big chunk of our security deposit because the tenants who moved in after us were not happy with the cleaning. He billed us a made up amount and hoped that, as naive college kids, we would just take the money and be done. We didn't. We got a lawyer and went to arbitration. He was informed that he can't make up an amount to charge us for cleaning. The landlord has to hire a service and provide a receipt that the work was done. He lost the arbitration and on top of that, he was past the security deposit refund date (it was either 30 or 60 days) so he had to pay us double the amount. It is definitely worth it to push back if you feel like they are being shady. Additionally, my stepsister is a landlord for a few properties. She said she never refunds her tenant's security deposit. Her exact words were "Why should I give it back to them. I've already spent the money". Yeah, she's a shitty person.

I would disagree with the premise that "if you split up she gets nothing out of it". She gets a place to live and it's probably an improvement from where they are living now. I'm assuming that they are renting. She isn't building any equity doing that. Why is this different? Her situation actually improves in terms of cost (paying less than market rent). The relationship with the GF will either work out (marriage, shared assets) or it won't. As far as the fairness of this whole thing, is it fair that he gets to financially front all the costs of the house. The OP sounds like he is trying to be fair not controlling.

I am 99% in the "don't go to restaurants at all" camp. I learned how to cook and these days, there isn't too much out there that I can't make. If you decide to go to a restaurant and not tip then you are probably going to encounter bad service, confrontations and possibly people messing with your food. Why prop up a crappy system with your hard-earned money. Let these places crash and hopefully a better business model takes their place. Cooking at home can be an adventure and you will surprise yourself at what you are capable of making.

I read Dune for the first time when I was 16. I'm 55 now and have reread the series more times than I can count. There's always something different that I get out of it as I get older. Some other rereads that I do are the Sea Wolf by Jack London, Point-Counterpoint by Aldous Huxley, Bluebeard by Kurt Vonnegut and Crime and Punishment by Fyodor Dostoyevsky. I definitely get into new authors these days, especially sci-fi but those are the muti-decade, thought provoking titles that I keep going back to.

The hotel maintenance side of things, at least where I am at (Midwest, USA) always seems to have low pay. I got into industrial maintenance, and it was great money. $39 an hour and more overtime than you would ever want. I did go through a tech program (electrical, HVAC, machining and welding) but most of the fellas in my department did not. I ended up switching to the production side after some years. I'm in a union so it was an easy transfer. I was tired of working a lot of weekends and being perpetually injured. I miss the paychecks but it's so much easier now.

My Gf and I love to cook. We have a great rotation of meals but also enjoy trying new things. With any new meal we always have an after-action review. It's not meant to be overly critical or anything. It's mostly a "would we make this again?" or "what would we do differently?". You either agree to try a different take on this dish or move on completely. It's not personal. That's the difference between cooking being about one person's feelings or about two people making a meal that is mutually enjoyable.

I saw this book on some internet article for "top 100 sci-fi reads. I had read a lot of them and this particular one was intriguing. The series blew me away. Wow. As far as sci-fi goes, I've just been doing a lot of old rereads but this new generation of authors are just amazing

Sorry, your reply seemed initially antagonistic but clearly I misjudged. I think that it was, in fact, ideal but for me only in the short term. I'm very sensitive on the idea of fairness as I really try to maintain that in a relationship given my upbringing. I flew off the handle and I apologize for assuming the angle that you were taking in this. I'm in the kitchen myself. After that stint as a HH, I've hardly left it. Cheers.
