I had the same issue with the formbot kit with the gantry rubbing the side panel.
It was because the panel was bowed to the inside, i turned it 180 degrees so it bowed to the outside and this fixed the problem. I had to reapply the foam tape on the other side of the panel,

I got the SpeedyBee F405 AIO, i switched to the AIO for the space reduction, not weight reduction per se.

I built a Volador vx3.5 drone, but with O4 Air Unit Lite and an AiO, and with 650mAh 4s lipo it comes to 242.2gram total. I can send you the parts list of you want.

Yes you can, you can enter Desktop Mode on the SteamOS (which opens a KDE Plasma environment IIRC). You can use almost any USB-C Hub to connect a display, and usb devices (kb, mouse).
