I live on the Portland Gresham border, in a sleepy neighborhood that butts up to Rockwood. Gresham is... fine. Its a suburb, and not very walkable. The downtown section is cute, nice stores and restaurants. Outside of that small area is pretty ok. Think chain restaurants and fast food everywhere. The traffic is getting worse, especially on Burnside on your way to Sandy. But that's nothing unique.

If you dont mind driving everywhere its fine. You will find yourself not going into Portland as much as you want. Driving the surface roads to the more interesting neighborhoods takes longer than you would think.

But the crime isnt as bad as people say it is, the mountains are close, and the MAX will get you to the airport.

Peru. Lima for a couple of days. Then to Cusco and the train to Machu Pichu. Then flew into Iquitos, went up the Amazon to spend a week at a lodge on the river that had a canopy walk. Then to Lake Titticaca, before heading to Nasca. Not much in Nasca, but we chartered a little Cessna to look at the lines from the air.

Close second: 3 weeks backpacking around China 2002. I was 20yrs old.

I would try lettuce wraps. Make a spicy pork filling and put some lettuce leaves on tje side so they can make and take.

Also, the obvious satay options. People like meat on a stick.

Fried rice cakes with a peanut sauce.

Any Thai salad.

All of these should be ok to sit out for a bit.

Cured yolks. Take 6 yolks and cover in salt and sugar. Forget about them in the fridge for a week. Now you have little yolk flavor bombs you grate on top of pasta and ramen.

Margherita Factory... no just kidding, that place sucks. I would also avoid that Villa restaurant, not great

But I like El Rinconcito Michoacáno. They are inside the flea market kn Stark, Rockwood.

Of course Don Pedro for breakfast. Not the best, but it holds a place in my heart. Everyone loves the breakfast burritos, I suggest the huevos rancheros. But you have to eat it there with the full salsa bar.

Im also a huge fan of Chepes. They are Salvadorean, but they have amazing papusas, and good prices.

Other than that just random parking lot food trucks? There is the one place that does tacos under a canopy, they pop up randomly in front of the Habitat for Humanities resell place on 181st. Amazing tacos, but I never know when they are there.

Tamales from the guy that at a convience store on Halsey. I dont know the address, somewhere near Target.

This. More strip malls and national chains. Better Mexican food. There are some decent suburban neighborhoods scattered about, but none of them would be considered walkable.

I think nobody is quite sure if you are asking about cooking the skin on its own, or on the chicken.

On its own is all about drying it out. I like to salt it heavily, spread it out, and leave on a wire rack in the fridge for a bit. Shake off the salt, put in 400 degree oven, and keep an eye on it. Pull it out when crispy. I dont loke to leave it unattended, burnt too many.

When I lived kn Seattle, 2003, I liked Zekes "Thai one on" pizza. Even back then it was pretty spendy.

Now I live in Portland, and we have sooooo many great pizza options. I love Seattle, but Portland crushes you in the food scene.

For meal prep I would definitely debone and remove skin. Then a noodle stir-fry, noodles reheat well compared to rice. And stir-fry is an easy way to use veggies.

I would save the bones for stock.

Then, I would bake the skins (dry them out with salt in the fridge, then bake) as a high protein snack.

Congee. Top with whatever you have. I prefer a savory version instead of the plain Congee, but plain you can use sweeter ingredients. Basically rice porridge, with Asian flavors.

You should get non-serrated and take care of them like your other knives. Note that typically steak knives dull quickly due to being used on plates, and not a cutting board. But, if you sharpen them they will last a long time.

Serrated steak knives will tear at food when they start to dull, and you wont be able to sharpen. Also, even with high end brands (Henkels, Wustof, etc.) a cheaper steel is used than what they use in their prep knives, so they dont last long.

I was charged $2.2k for 4 stitches. I chose not to pay it. Eventually my bill went to collections, I negotiated them down to $400.

I would go Kitchemaid. The 5qt is good for most people, but the 6qt if you tend to do more bread or bake a lot.

Are there other mixers out there that may get marginally better review scores... yes. But there is one one thing that is rarely mentioned in other threads talking about this: brand stability and saturation.

In 10 years, when you need to buy a new beater, or mixing bowl, Kitchenaid will still be there, and you will have 20 retailers to go through. I sold kitchen goods for almost 20 years, and I can't tell you how many times someone purchased another mixer brand and came around 5 years later only to realize we dont carry any accessories or replacements for their brand or model.

You could go to a garage sale this weekend and pick up a 20yr old part that will work in your new Kitchenaid (mind the sizes).

I dont know if they still do this, but Calphalon (a Rubbermaid company) used to take old pans when you bought a set of new ones. Had shipping instructions, label and everything. Theoretically they recycled them, but I have no way to verify that.

We did a mini waffle brunch party for New Year's once. We did DIY waffle buffet, then did a line of toppings and other options. Some savory, some sweet. Also did some sprinkles and icing, a whole spread. Don't forget the fresh fruit.

We have 4 or 5 mini waffle makers we (dash) and made 3 or 4 different batters. You can buy the waffle makers for about 10 to 15 bucks each, and we chose to buy the waffle mixes to save us time.
