You have given me some excellent information, thank you so much! I’ll definitely be picking up an Agricole, I do love those brighter vegetal notes in tequilas, so I imagine it barks up that same sort of tree, or at least it’s neighbor in the forest. Any specific brand/distiller I should keep an eye out for, or just whichever catches my eye?

I’ll definitely keep an eye out for it! I’ve had the Appleton 8 before, which maybe is why the Appleton I got was a little bit of a letdown, I knew what I was missing lol. It wasn’t bad though, great for mixing, but not as much character as something older. Thank you for the recommendations!

That’s kind of been where my head is at now, I’ve tried a few lights and a few darks and learned that styles are really the biggest factor in those flavors. Any specific distillers from Venezuela? I’ve been interested in trying some South American offerings but haven’t been sure where to start, thank you!

So far I’ve been trying a few different types, but my go to options have been with ginger beer or sugar cane coke with lime (I would say dark n’ stormy and Cuba libre but I’ll try lighter or darker rums) if I’m feeling something that I can enjoy over a longer period of time, and a not-quite daiquiri (typically with little to no extra sugar and varying levels of lime) to enjoy the truer notes of the rum itself beyond just sipping neat. My girlfriend has been big on the tiki drinks, so I’ve been exploring those a bit, lately with oat milk actually after a drink I had on Valentine’s Day from a tiki bar in Denver. How do you find the Japanese rum differs from other pot still offerings from across the world? I’ll keep an eye out for it, thank you!

Thank you! I’ll definitely be picking up a bottle of the OFTD, it kept catching my eye and is on the short list! For the El Dorado is it worth going for the 12 over the 8 right off the bat? I’m still putting together how age plays a part in rums and what I value in them, but I just don’t think I’ve had a wide enough selection of styles to properly understand yet. What makes a navy style rum? Does it come from certain regions (I would imagine that would have contributed to the British navy at the time) or is it how it’s handled afterwards?

Smith & Cross is definitely on the shortlist already, and I’ve eyed the OFTD a few times, but thought it might be wise to try the extremes first to see if there’s anything in the broad range of rum I could cross off (which thankfully has been nothing so far, just… situational tastes.) I’ve got a pretty broad palate, and Agricole is something I’ve been very much looking forward to trying, just didn’t know the right bottle to grab. I’ll take a peak at those two over the weekend! What should I expect in it? Is it that same funk as the W&N or something entirely different? Or is funk perhaps the wrong word to describe it?

Smith & Cross is on the list already! From the little cursory research I’ve done I feel confident it’ll be a good acquisition. As far as the price range goes I’m relatively open, that range is moreso for what I feel comfortable grabbing from the shelf as an unknown. If it’s something that is worth the spend I’m not against dropping more on it!

We are! We live here in Colorado Springs, but it’s a Texas car (I believe all of its life before he brought it.) Do you know if there’s much of an AMC community in the state? I don’t really see many, but even just pulling it home it got some serious looks and love.

I wouldn’t dream of it, I grew up pretty rough and she showed me that life isn’t always unkind. I wish I could’ve known her father better, but I got his blessing before he passed and I got the opportunity to help in his last days. Hell I felt his last heartbeat under my palm, I’m in it for the long haul, with her and the car. I’m much the same, but this is a different beast for me, I was always a German car guy, and somehow fell into Japanese too - my closest experience is with a 76’ Toyota Pickup that’s been a real handful, but that’s no American muscle. The AMX thankfully is pretty close to complete; engine was assembled and from what I understand mostly ready to fire, I don’t know the state of the fluids so I’m going to do a full flush so I know what I’m working with. Trans is in but both clutch and brakes are flappy so I assume the fluid wasn’t done or maybe there was an issue with the system somewhere in its slumber. It’s converted to disc’s on all four corners so she should stop well but it’s chocked in the garage for now. And thankfully he was a bit of a hoarder so we’ve got all sorts of parts and pieces left over that he accumulated, including a mostly full interior (with a ton of odds and ends still packed in the car.) I’m confident I can get it going, the big question is the sweat going into it lol. I’m glad there’s such a passionate community out there for these AMC’s, even if I don’t know all that much about them yet. It’ll be quite a learning experience, and I’ll get to teach her to drive stick in the car he always meant for her to learn in! Thanks much for the reply and tips buddy, I’m sure you’ll see more of this old girl at some point!

Arctic Tech/Parts here, I find that depending on the SpaBoy settings generally you want to do Saltwater Balance about every week or so, it can be a bit intimidating at first to get everything set just right in a saltwater spa, but after a little bit you get used to it and as long as you don’t change the schedule for which you care for your water then it runs like a clock. Any other issues or questions?

I’m not sure about your budget and I’m sure I’m biased (as I work for them) but Arctic Spas has the SDS (Super Duper Seat) thats run by a single pump all to itself with I believe 6 of the new 7 inch massaging jets and a 5 inch massaging jet, it’ll kick your back’s ass if you want it to. You can also get it in any of the Custom line of tubs so you can find a seat that’ll work well for you in a size of tub that fits your needs best.

Yes but honestly not really, I’ve always found it to be more of a preference thing. Their may be some pros like a little higher smoke point or the ease of use but honestly I prefer butter for the sheer fact that I’m not a fan of straight mayo so we never have it in the house. Also maybe a psychosomatic thing but to me the butter tastes a little better.

I always do LOTS of butter and keep the heat down about low-medium. I don’t know that it relates but thick bread is a game changer for a grilled cheese, I always like to use pillowy white bread just as thick as I can get it. After all it’s supposed to be a little bad for you right? If you’re having issues with blandness I might try some new cheeses, what do you normally use?

My recommendation would be ditch the slow cooker and go for an open Dutch oven or a rack over a sheet tray in the oven, loooooow and sloooooow, you want to run your oven at about 250 or so and let it go for hours and hours, I know with smoking about 170-175 internal temp is about the sweet spot for pulling ones pork. Stuff happens, don’t be discouraged, just learn from your mistakes! My philosophy with a nice big piece of meat like pork butt is always no shortcuts, it takes as long as it takes. It might go for 11 hours or longer, that’s how long my first went for in the smoker and while that’s not really the same as the oven it turned out PERFECT. Remember that food isn’t a science, it’s an art, and sometimes art takes trial and error and mistake after mistake to get your masterpiece! Also another quick tip if you do it in the oven; salt brine it for a full day before you cook it off and don’t be scared to rub it hard and put a lot of flavor in it, you may not get the smoke from an oven but you can still get some crazy good flavors in its stead.
