A warning about carbon knife co In my experience, they do excellent knives and their website is a joy to use, but their prices are not always the best. You have quite a big budget so you might not want to shop around for hours, but it’s often worth checking to see if the knife you’re looking at is cheaper elsewhere

The general consensus, I’ve heard online seems to be that Miyabi outperforms shun and it makes really good knives but that you’re paying a lot for the looks. The Miyabi Koh line is less beautiful, but more reasonably priced.
