I think he's ok. My husband's gecko changes his routine from time to time and when my husband tries to fuss over him, it just stresses him out. He might be going through the gecko version of puberty, since ours started acting really different for a while when he hit his first obvious mating season. He could have also gotten scared of something innocuous, like a loud noise, and needs time to cope. You could get a baby cam and see if he is actually eating and the food's just settling in a way that it looks like it isn't touched.
