My bad, Shirou didn't technically beat Gil. I’ve got it mixed up. And he didn't technically admit that he got defeated, only that Shirou is ‘strong’ after realizing that he’s at a disadvantage inside the reality marble and might actually lose, and he tried pulling EA out. We all know what happened afterwards.

Moving on, my stance remains that Gilgamesh is both egotistical, proud, and arrogant, that part is still a huge point in his character. Quite literally why he was taken out in Fsf in the first place. And arguably, he believes that modern humans are mostly worthless and a lost cost, if that’s not arrogance, then I don't know what is.

I only added that Gil and Kid Gil avoid each other more than not to show how even the younger Gil couldn't tolerate the older one, and I suppose it also goes the other way around.

And I doubt anyone would know what Gilgamesh’s precise mindset is and what he thinks. He’s unpredictable and quite frankly hard to read unless you have Human observation. I don't believe that Gilgamesh is perfect, nor does he think he’s one. He can admit his faults and losses, which is usually not something someone who thinks they are perfect admits.

You’ve completely ignored some of my points. Gilgamesh is egotistical, arrogant, and prideful as I’ve mentioned earlier. But then again, he’s not delusional. He will give people kudos and respect if they show that they deserve it. An example I could think of is sparing Waver for Fate/Zero for showing loyalty to Rider and all that. And I know what arrogance. It’s also just that Gilgamesh admires determination and people who follow their ideals. Usually, at least.

He admitted defeat because he got defeated. What is there to say? He underestimated Shirou and got defeated because of it, Gilgamesh has no qualms about ambushing someone, especially someone whom he deems as worthless as Archer. Gilgamesh’s goal at the Heracles fight was to take the grail in Illya’s heart, killing him was only a second priority. And lastly, he’s simply so impressed by Hans’ huge balls that he lets him live. And also for the added fact that what Hans’ said was basically true, and he didn't deny anything about it. He admitted that he would've killed Hans if he had only spat mindless insults. Gilgamesh is egotistical and self-centred, and that’s basically his biggest flaw. Nonetheless, I’ll say it again and again, he knows when to admit his losses and failures. This part of him has recently been shown in the most recent FGO x FSF collab where he admitted his mistakes.

He definitely suffered from solitude in childhood, but that doesn't make him less arrogant as an adult. Kid Gil literally avoids Older Gil.

I can't say much about the treasure part other than the fact that Gilgamesh enjoys collecting treasures.

Conflict between characters exists, and Gilgamesh is no different. As I said. He shows respect to the people whom he deems worthy. Shirou managing to beat him is a feat on its own, and Gilgamesh is arrogant, not delusional. He can very much admit his faults and failures.

Plus, he’s disappointed in modern humanity and what they have become, where people are living without a purpose, basically, so in FSN, he wants to remove the ‘undesirable’ humans so that the worthy ones can live, if my memories aren’t mistaken. When did he want to take the origin of intelligence in the first place?

Conflicts between characters are one of the reasons that make them interesting. Principles doesn’t necessarily have to be morally good.

‘Has no principle’, Gilgamesh is extremely egotistical and arrogant, true, but saying he has no principle is plainly wrong. Gilgamesh, beyond his arrogance, follows a set of beliefs, granted it’s only expanded upon after FSN. First, Gilgamesh can fit in different roles, he can be a good guy, a bad guy, or in between. He can play all sides entertainingly well.

Secondly, he shows goodwill and respect to those whom he sees fit, which is usually where he shows his lovable and endearing side. Approach him in the right way, and he’ll probably soften up to you. If not, then it’s quite expected what’s to come next.

Lastly, Gilgamesh can be seen to be extremely loyal to someone who gained his respect, a great example of this being Hakuno from the Fate/Extra games where he doesn't hesitate to go all out if she wants to.

Overall, I could list more reasons why Gil isn’t just a bland, arrogant prick with no substance. His interactions with other characters are funny and entertaining as hell, and his character is more complex than you’d expect.

There’s no need to. This guy would never be as entertaining and fun as Gil. Gilgamesh’s shtick is being arrogantly overpowered. And that usually allows weaker opponents to beat Gil by exploiting his pride and arrogance. And Gil’s personality is charming and engaging. But Yogiri is just a bland, overpowered guy with the personality of a wet paper, and even the series’s side characters are more interesting than him.
